Labor Day in Hawaii - Hawaiian Barbecue
Ok, so we're not actually in Hawaii, but a woman can dream! Nevertheless, we are doing our best here at our home to make the most of these last few weeks of summer!☀️ With the temperatures here in Nebraska cooling off a bit, we're spending more of our evenings dining outdoors and watching the sunset. The sunsets are stunning here on the plains!
If you're residing in pleasant weather this weekend perhaps you're partaking in the well-known activities of Labor Day - picnics, parades, and parties! I'll be preparing one of my favorite crock pot meals for our guests this weekend and I wanted to share it with all of you! Try out these delicious Hawaiian Barbecue Chicken Sandwiches! They will not disappoint!
Hawaiian Barbecue Chicken Sandwiches
3-4 lbs. chicken breasts
16 oz. Prepared Coleslaw (This is one of our favorite recipes for this dish - Hawaiian Beachcomber Coleslaw)
2 cups pineapple juice
1 1/2 cups barbecue sauce (I recommend Sweet Baby Ray's Honey Barbecue Sauce)
2 tbsp. honey
1 tbsp. Worcestershire Sauce
1 tsp. minced garlic
2 tsp. salt
1 onion sliced
1. Place chicken in crock pot with onion
2. Mix all other ingredients in a bowl
3. Add mixed ingredients to crock pot
4. Cook on medium to high for 4-5 hours (be sure to check temperature and time and adjust accordingly to keep the chicken moist)
5. Shred chicken and serve on Hawaiian bun with coleslaw
